Ingredients
1/3 cup Buffalo wing sauce
1/4 cup BelGioioso® Freshly Crumbled Blue Cheese, room temperature
2 oz cream cheese, room temperature
2 cups Brookshire’s Boneless Skinless Chicken, cooked and shredded
1/4 cup celery, diced
2 tsp parsley, chopped
1 (14 oz) pkg Brookshire’s Refrigerated Pie Crusts
1 egg
1 Tbs water
Directions
  1. Preheat oven to 400° F. In a large bowl, combine wing sauce, bleu cheese and cream cheese. Add chicken, celery and parsley. Stir to combine completely.  
  2. On a large floured surface, unroll a sheet of dough. Using a 3-inch to 4-inch round biscuit cutter, cut out circles of dough. Place circles on a parchment-lined baking sheet. Repeat with second dough sheet. In a small bowl, combine the egg and water. Brush egg wash around the edges of each circle. Add 1 tablespoon of filling to the middle of each circle, and pull up the sides. Press the edges closed, and place back on the baking sheet. Repeat with remaining dough circles.
  3. Using the tines of a fork, press the edges together to seal and create a decorative edge. Brush the tops with egg wash. Use a sharp knife to cut vent holes in the top of each hand pie. Bake for 30 to 35 minutes or until tops are golden. Let cool before serving.
